Chapter Two · Everything begins with Jiri

Jiri, Dolakha

Where our story begins.

A place shaped by mountain life

More than where our trout is raised.

Jiri is a mountain town in Dolakha, known for green valleys, forested hills, waterfalls, a cool climate and a peaceful rural landscape.

Our farm sits at around 1,900 metres, where the mountain climate and naturally cold spring water create excellent conditions for raising rainbow trout.

The historic gateway to Everest

Before flights to Lukla became common, Jiri was a starting point for journeys into the Everest region. The traditional route was used by early expeditions, including the historic 1953 Everest expedition associated with Tenzing Norgay and Sir Edmund Hillary.

Jiri’s water, climate, farming traditions and local community shape every fish we raise.

Why Jiri matters to our trout

Quality begins
with place.

01

High altitude environment

Our farm sits at approximately 1,900 metres, where the cooler mountain climate is well suited to rainbow trout.

02

Cold spring water

Naturally cold, flowing spring water provides the oxygen that healthy trout need.

03

Slow mountain growth

Our fish is raised for approximately 14 to 16 months, allowing it to develop its characteristic texture, flavour and quality.

04

Local knowledge & employment

We prioritise local employment and give young people opportunities to gain practical skills through real experience at the farm.

Chapter Three · The place shapes the product

Quality, understood
in one glance.

Quality begins with altitude, water and time. These natural conditions give careful farming the chance to produce exceptional food.

Chapter Four · A family story

A possibility
already at home.

The farm began in 2012, rooted in land the family already knew and water that had always shaped life in Jiri.

Over time, the family kept learning about trout, water, nutrition, handling and the standards needed to bring a mountain product beyond the farm.

When Neha looked at the cold spring ponds, she recognised more than an existing farm. She saw the foundation for a premium Nepali food brand: one that could honour its place while raising expectations of what could be made there.

Chapter Six · Nature creates quality

Made by place.
Protected by practice.

Jiri Pink Trout is premium rainbow trout shaped by its mountain environment, specialised nutrition and the time it is allowed to grow.

Raised at around 1,900 metres in continuously flowing cold spring water, each fish grows for approximately 14 to 16 months in spacious ponds. Knowledge shared by a Japanese trout specialist guides our approach to water flow, feeding, fish health, hygiene and handling.

Its distinctive pink flesh develops through carotenoids, including astaxanthin, in premium feed made specifically for trout. Jiri Pink Trout is not salmon, although both belong to the Salmonidae family. This is why they share some similarities in appearance, texture and nutritional value.

The colour develops through nutrition as the fish grows. It is not artificial dye or chemical colouring, and we do not use steroids to promote growth.

Chapter Five · Neha Karki · Managing Director

A Vision That
Found Its Way Home

Neha’s education opened the world to her, but Jiri gave it purpose. While living in Kathmandu, she returned whenever she could to the hometown where she felt most alive and at peace. Looking at the cold spring ponds of her family’s farm, she saw more than an existing business. She saw the chance to bring together the nature she loved, the farm’s potential and a higher standard of trout for Nepal.

With guidance from a Japanese trout specialist and the knowledge she gained through her studies in International Relations, Diplomacy, Development Studies and sustainability, Neha helped strengthen the farm’s approach to fish health, nutrition, hygiene and handling. Today, as Managing Director, she is building Jiri Pink Trout into a premium Nepali food brand while creating practical opportunities for local people and contributing to the hometown that shaped her.

Chapter Eight · More than trout

As the Farm Grows,
Jiri Grows.

Our work is about more than raising trout. It is about creating meaningful work, practical skills and new possibilities in the place we call home.

We prioritise young people from Jiri and nearby communities, giving them practical experience in fish farming, cleaning, packaging, cold chain handling, logistics and market supply. As the business grows, the people behind it grow too. This strengthens local livelihoods, supports Jiri’s economy and keeps the community at the heart of the brand.

  • Responsible mountain aquaculture
  • Safe and consistent food quality
  • Local jobs and practical training
  • A stronger rural food economy

Chapter Eleven · The future

Raise the standard.
Keep the roots.

The ambition is not growth for its own sake. It is meaningful progress that stays connected to Jiri.

That means creating opportunity close to home, strengthening practical skills, protecting the water and land that make the product possible, and helping Nepal’s premium food sector earn greater trust.

As the brand moves forward, the measure of success remains simple: better food, responsible work and a stronger future for the place where it began.

Knowledge centre

Good questions.
Clear answers.

01Why is the trout pink?

The pink colour develops gradually as the fish grows through carotenoids, including astaxanthin, in feed made specifically for trout. These nutrients are absorbed naturally and give the flesh its distinctive colour. It is not artificial dye or chemical colouring, and the exact shade may vary slightly from one fish to another.

02Is Jiri Pink Trout salmon?

No. Jiri Pink Trout is premium rainbow trout. Trout and salmon both belong to the Salmonidae family, which is why they share some similarities in appearance, texture and nutritional value. Rainbow trout remains a distinct fish with its own delicate flavour and firm texture.

03How should it be cooked?

Jiri Pink Trout works well with both simple and bold flavours. Grill it with lemon, garlic and fresh herbs, bake it with rosemary and butter, or pan sear it until the skin is crisp while the flesh remains tender. For Nepali flavours, prepare a light trout jhol curry with tomato, cumin, coriander, turmeric and timur, or marinate pieces with ginger, garlic, chilli, turmeric and lemon before frying. It can also be steamed with ginger and spring onion or cooked in an air fryer for an easy family meal. Trout cooks quickly, so keep a close eye on it to preserve its moisture and delicate texture.

04How is it protected after harvest?

Every trout is cleaned twice, inspected and individually weighed after harvest. It is then vacuum packed and frozen to protect its quality, flavour and texture. The fish is transported from Jiri through a managed cold chain so it remains properly frozen until it reaches the customer.

05What does Jiri Pink Trout taste like?

Jiri Pink Trout has a clean, delicate flavour with a firm yet tender texture. Its taste is mild enough for simple preparations while still holding herbs, spices and sauces beautifully. This makes it suitable for everyday family meals as well as refined restaurant dishes.

06How should I store and thaw it?

Keep the sealed pack frozen until you are ready to use it. For the best result, place it in the refrigerator and allow it to thaw slowly while still inside its packaging. Once thawed, cook it promptly and avoid leaving it at room temperature for an extended period.

07Where can I buy it?

You can order directly from Jiri Pink Trout or find it through selected retailers, restaurants, hotels, farmers’ markets and distribution partners. It is available across Jiri, Charikot, Tamakoshi, Kathmandu, Lalitpur and Bhaktapur, depending on current stock. Contact us by email for help finding the most convenient place to buy.

08Can restaurants order in volume?

Yes. We welcome regular and bulk enquiries from hotels, restaurants, retailers and distributors. Our team can discuss quantity, pack requirements, delivery timing and cold chain arrangements according to the needs of each business. Advance planning is encouraged for larger orders so supply can be prepared carefully.
